Progressive Miami chefs will experiment with pulse dishes reflecting local cultural diversity, from classic Cuban black beans to Caribbean pigeon peas. Pulse Innovation Miami, the city’s first event of its kind, will showcase the versatility of pulses and their impact on human health and global sustainability.

Chef Ron Pickarski is the United Nations Food and Agriculture Organization (FAO)’s North American pulse chef, raising awareness of and appreciation for 2016, the International Year of Pulses. The first vegetarian chef to be certified as an Executive Chef by the American Culinary Federation, Pickarski is Founder/Director of the American Natural Foods Team, which earned seven gold, silver and bronze models at the International Culinary Olympics in Germany with their presentation of pulses and vegan cuisine. Pickarski is the author of four cookbooks. including his latest, The Classical Vegetarian Cookbook for Professional Chefs and Inspired Cooks, which extensively addresses pulses as a replacement for meat.

Eco-entrepreneur Brian Machovina
FIU alumnus and eco-conscious entrepreneur Brian Machovina finds the sweet spot between market-driven conservation and reforestation. He helped bring to market Guayaki Yerba Mate, a rainforest-harvested tea, and is co-inventor of Yonanas, a kitchen appliance that turns frozen fruit into an ice cream-like treat. Working with actor Woody Harrelson, Machovina established Oasis Preserve International, a conservation organization protecting rainforests in Costa Rica and Peru. FIU TEDx speaker and owner and manager of Essential Living Foods, he has served as Executive Director of the environmental advocacy coalition California Coastkeeper Alliance and is currently an FIU Postdoctoral Associate, teaching Conservation Biology.
Sustainability Expert Eric Von Wettberg
FIU Associate professor, evolutionary ecologist and sustainability expert Eric Von Wettberg works to restore resilience and genetic diversity in wild crops including chickpea and pigeonpea throughout the world, including Turkey, Ethiopia, India and the Caribbean. He and his research team also monitor and analyze loss of crop variation in rare and tropical plants of Florida and the Caribbean. A PhD in Ecology and Evolutionary Biology, Fulbright scholar and NIH National Research Research Service Award recipient, Von Wettberg currently chairs the Botanical Society of America Genetics committee. The author of over 40 articles, Von Wettberg currently teaches conservation genetics.

Chef Carolina Molea
The Cordon Bleu-trained chef/owner of The Whisk Bakery & Cafe (opening in 2017), Carolina Molea was born and raised in Caracas, Venezuela in a home where food was always at the center of celebrations. Her grandmother, Ana, a professional cook, taught her how herbs and spices create dazzling dishes full of love and flavor. Molea also learned the healing power of food and the great responsibility to nourish not only the bodies, but also, the souls of those we cook for.
